Untraditional Caesar Salad
Dressing:
1 tbsp olive oil
2 gloves garlic, mashed
1 tbsp lemon juice
1 tbsp red wine vinegar
1 tbsp water
1/4 tsp dijion mustard
1/4 tsp black pepper
1 tbsp feta
1 tbsp parmesean cheese
Salad
1 handfull of your favorite salad mix
1/2 handful of spinach
3-4 scallions (green onions), chopped
1 cup favorite croutons
1. In a small sauce pan, heat the oil and garlic over medium heat, saute for about 5 minutes.
2. In another bowl, combine the lemon juice, vinegar, water, dijion, and black pepper. Add to the garlic mixture.
3. Heat over medium, stirring constantly, for about 1 minute or until the mixture starts to bubble. Remove from the heat and allow to cool for about 5 minutes or if prefered, completly cool.
4. Add the cheeses to the dressing and stir to combine. Combine all the salad ingredients and toss with the dressing.
IF you want to make your own croutons, which by the way is VERY VERY easy, double the dressing ingredients and before tossing with the cheese, drizzle over cubbed french bread (or other day old bread) and broil for 5 minutes.
By the way, a warm untraditional caesar dressing tastes fabulous in the winter.
